Melbourne’s getting its very first all-vegan pizzeria next month, called Red Sparrow, which will open in Collingwood.

Co-owner and chef Michael Craig has been a vegan himself for over 10 years, who most recently worked for Trippy Taco. Now, him and co-owner Shelley Scott are working together to bring vegan pizza to the Australian town that is booming with veganism.

“My pet hate is when you go to a pizzeria and they’ve got 40 options, but they’re all pretty much the same, you’ve got the vegetarian one, and then there’s the vegetarian with extra pineapple,” Craig said.

Craig and Scott’s new pizzeria will solve this commonly understood issue by featuring meat and dairy-free “Neapolitan-style” pizzas, which will be baked in a wood-fired oven imported from Italy.

Vegan dessert will also be on the menu, and so will vegan-friendly wine, beer and Australian spirits once they’ve got their liquor license.

“We’ll do a vegan tiramisu, raw brownies, and Nutella-type pizza, but we’ll make our own hazelnut chocolate spread,” Craig said.

The pizzeria will feature 32 seats and will offer takeaway. They are planning to open early this February at 406 Smith Street, Collingwood and are hoping to see many Melburnians there!
