Jean-Georges Vongerichten is Opening His First Vegetarian Restaurant

World-famous French chef and New York restaurateur Jean-Georges Vongerichten will be opening his first meatless restaurant this September, which will be called abcV.

Chef Vongerichten has influenced the culinary world with his restaurants, including JoJo, Spice Market, and ABC Kitchen. However, he is now opening the vegetarian restaurant that we have all been asking for!

However, this restaurant won’t be serving usual meat-free burgers or other popular vegetarian dishes. Instead, this chef, who prefers to call his eatery, “a vegetable restaurant,” is going to elevate the flavors of veggies and create amazing dishes centered around them. In fact, you can find many dishes inspired from international cultures, such as crepes, congee, dosas, and even kitchari, which is a lentil-based dish that he borrowed from Deepak Chopra.

Chef Vongerichten is loving the menu that he and his chef de cuisine, Neal Harden, are coming up with, so far. “Wait until you try our kraut,” he said.

Chef Vongerichten is one of the many chefs influencing the culinary world nowadays. Prior to the announcement of Vongerichten’s new vegetarian restaurant, restaurateur Ravi de Rossi closed his first restaurant, The Bourgeois Pig, to transform it into an all-vegan tapas bar. This eatery, called Ladybird, opened on July 21, 2016 in New York.
