1- The Best Baked Pumpkin with Nutty and Fruity Rice

This is an excellent, easy to make recipe which would be great at vegan thanksgiving. It takes about 1.5 hours to cook.

Ingredients needed:

  • 1 pumpkin , about 1kg
  • 2 cloves garlic , peeled
  • olive oil
  • 1 red onion , peeled and finely chopped
  • 1 small handful black olives , stoned and chopped
  • 2 sprigs of fresh rosemary , leaves finely chopped
  • 1 dried chilli
  • sea salt
  • freshly ground black pepper
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 50 g basmati rice , washed and drained
  • 75 g dried cranberries
  • 50 g shelled pistachio nuts
  • 1 tangerine , zest of
  • 200 ml organic vegetable stock

2- Maple Cider Tofu with Stuffing and Apple Cranberry Chutney

Another great option for vegan thanksgiving. it is a little time consuming but the end result will make you happy.

Ingredients needed:

  • 2 tbsp margarine
  • 4 Gala apples, peeled, cored, and chopped (or another cooking apple)
  • 1/4 cup golden raisins (optional)
  • 1/2 cup fresh cranberries
  • 2 tbsp maple syrup
  • 2-4 tbsp apple cider-
  • 10 fresh sage leaves, chopped
  • 2 slices sourdough bread (or so. You will need 1.5 cups of cubed bread when you are done)
  • 2 tbsp margarine
  • 1 leek, white and light green part, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp apple cider
  • 1 tsp thyme
  • 4 cups packed baby spinach
  • salt and pepper
  • 2 tbsp margarine
  • 1 pkg firm or extra firm tofu
  • 3 tbsp maple syrup
  • 2 tbsp apple cider
  • salt and pepper

3-  Butternut Squash, Brussels Sprout, and Bread Stuffing with Apples

  • pound brussels sprouts, halved
  • medium gala apple, cut into a 1/2 inch dice
  • shallots, thinly sliced
  • tablespoons olive oil, divided into 2 tbsp and 1 tbsp
  • cup onion, diced
  • cup celery, diced
  • 10 slices bread of choice: crusty sourdough, dry cornbread, whole grain, or, if you are gluten free, millet bread from Food For Life will work nicely. Prior to preparing the recipe, leave bread out for a day to become slightly dry, then cut into cubes.
  • 1 1/2 cups vegetable broth (plus extra as needed)
  • teaspoons fresh rosemary, chopped
  • teaspoon fresh thyme
  • teaspoon chopped fresh sage
  • 1/3 cup dried cranberries
  • 1/3 cup pecans or walnuts
  • Sea salt and pepper to taste

4 – Easy Vegan Pumpkin Pie

  • 1 1/4 cups raw soaked cashews
  • 1 cup maple syrup
  • 1 can organic pumpkin puree (16 ounces) (or use fresh puree)
  • 2 tsp pumpkin pie spice
