With lots of time on our hands due to lockdown, why not try some new vegan recipes? Influential fashion and lifestyle magazine Vogue Paris just shared some delicious vegan recipes you don’t want to miss out on.
The first recipe is Ladurée chef Fabrice Rialland’s vegan tartare. Made from beetroot, mushrooms, avocados and horseradish, this plant-based version of a French classic is a must-try!
Vegan tartare ingredients:
- 1 beetroot
- 1/2 red onion
- 2 shallots
- A handful of mushrooms
- 1 avocado
- 1 tbsp horseradish
- 1/2 lemon
- Salt, pepper, olive oil
The second recipe is Dark Spiced Socca from plant-based restaurant Mesa, located at Paris’ Hotel HoY. Made from ingredients such as chickpea flour and black turtle beans, it’s a promising protein-packed dish.
The third, and final, recipe is vegan matcha cookies from lifestyle website Poosh. It’s as if it was designed for cookie lovers!
- 2 tbsp coconut flour
- 1 tbsp almost flour
- 1 tsp ashwagandha powder (optional)
- 1 tbsp plant-based milk of choice
- 1 1/2 tbsp monk fruit sugar
- 1 1/2 tsp matcha powder
- 2 tsp cashew butter
- 1-2 tsp vegan chocolate chips
